"PROTEIN FOLDING is driven by the interaction with water as it emerges from ribosomal synthesis into the bulk aqueous phase of the cytoplasm. This particularly involves the hydrophobic interactions by reducing their large surface area with water which otherwise would cause an unfavorable entropy decrease." https://lnkd.in/eTDnmAQ View in LinkedIn

KEY BIOCHEMICAL REACTIONS. "Both proton-transfer processes and electron-transfer reactions may be facilitated by ordered water molecules connecting proton donor to acceptor sites or electron receptor sites respectively. In both cases, the transfer is faster where the linking water molecules possess stronger hydrogen bonding." https://lnkd.in/ev7vxpB View in LinkedIn

FRAGMENT IN NATURE continues with structured water. Beware the crazy fringe that has tainted otherwise provocative and interesting science about water by claiming all sorts of health benefits. This crowd of quacks and squeaks tend to follow aspects of science, adopt and modify it with all manner of outrageous and unsupported claims. https://lnkd.in/emCNhws View in LinkedIn

WATER AT SURFACES. "Water at a hydrophobic surface loses a hydrogen bond, therefore had increased enthalpy. Water molecules compensate for this by doing pressure-volume work, that is, the network expands to form low-density water with lower entropy. Water covers the surface with clathrate-like pentagons in partial dodecahedra, so avoiding the loss of most of the hydrogen bonds." https://lnkd.in/e7guwhy View in LinkedIn
