UMAMI, the universal fifth taste, imparted by glutamate, characterized by savory or delicious, was discovered only 100 years ago by Professor Kikunae Ikeda. It is found in soup stocks, meat dishes, aged cheeses, air-dried ham, shellfish, mushrooms, and ripe tomatoes.
