UNTREATED MILK consists mostly of L-amino acids, including L-aspartic acid, L-glutamic acid and L-alanine, with the L-form 5-10X higher than the D-form. Microbial infection causes an Alice in Wonderland racemisation to a relatively higher percentage of the D-form, or Looking-Glass Mirror milk.
